Homemade Peanut Butter Cups

Do you love Reese's peanut butter cups, but wishing they were a bit healthier? This is the recipe for you! These homemade peanut butter cups are made with whole ingredients and are just as delicious as the real thing. Homemade peanut butter cups are easy to make and are a great option for something sweet to enjoy at the end of a busy day.

Equipment

  • 24 mini muffin tin
  • Microwave safe bowl

Ingredients

  • 2 1/2 cups dark chocolate (bar or chocolate chips)
  • 1/2 cup creamy peanut butter
  • 1/2 cup almond flour
  • 1 tbsp honey
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • Flaky sea salt

Directions

  1. Line the mini muffin tin with mini muffin paper liners.
  2. Melt chocolate in a microwave safe bowl: Heat in the microwave for 30 seconds, remove and stir. Heat for 15 seconds, remove and stir. Continue microwaving for 15 seconds and stirring until the chocolate is completely melted.
  3. Using a mini cookie scoop or spoon, scoop in a small amount of chocolate to the bottom of the paper liners. Don't use too much, just enough to coat the bottom.
  4. In a small bowl, combine 1/2 cup creamy peanut butter, 1/2 cup almond flour, 1 tbsp honey, 2 tsp vanilla, and 1/4 tsp salt.
  5. Stir until it turns into a dough consistency.
  6. Take a small scoop of the peanut butter dough, roll into a ball, flatten with your hands, and place in the mini muffin tin on top of the chocolate.
  7. Scoop chocolate into each muffin tin to cover the peanut butter dough.
  8. Sprinkle with flaky sea salt.
  9. Place in the freezer for 10 minutes to set, and enjoy!
  10. Store in an air tight container in the freezer or refrigerator for 3-5 days.
